Having been at home for some time waiting for this baby to arrive, I’ve had a bit of time to do some more baking – not as much as I’d like, but enough not to get sick of eating sweet treats. Who gets sick of eating freshly baked goods anyway?!
I went a bit baking mad one day and made these yummy biscuits followed by another even more delicious biscuit from New Zealand, which will follow in my next post. These ones are really straightforward to make and the results are fantastic. If you want a quick, easy and delicious biscuit make them – you’re bound to have all the ingredients at home anyway which makes them even more tempting!! You won’t be disappointed.
Hokey Pokey Biscuits
Recipe from: Ladies, a Plate
- 115 g butter, room temperature
- 115 g sugar
- 1 tbsp milk
- 2 tsp golden syrup
- 1 tsp bicarbonate of soda
- ½ tsp vanilla essence
- 170 g flour, sifted
Preheat the oven to 180°C. Line two baking trays with baking paper or grease them lightly.
Cream the butter and sugar until soft and light.
Put milk and golden syrup in a small saucepan and bring to the boil over a medium heat. Add the bicarb and stir quickly with a wooden spoon. The mixture will curdle, but don’t worry. Keep stirring until it froths up and then pour it onto the butter and sugar and mix well.
Add the vanilla followed by the flour (you can add chocolate chips at this point for added deliciousness, but they’re traditionally made without). Mix until combined.
Using a teaspoon, put the dough on the trays, allowing room for spreading, and flatten them slightly with a fork.
Bake for 10–15 minutes until golden brown. Cool on a rack and store airtight. Makes about 24.
